A Frittata is a traditional Italian egg dish that is similar to a quiche but without the pastry crust. It is my favorite egg dish because it is super easy and tasty.


Do you know the Frittata is the perfect end of the week meal? If you use ingredients already in your refrigerator together with your pantry staples, you can create an especially tasty dish and lessen food waste.

  • Add your leftover cooked veggies, potatoes or rice.
  • Slice up that last sausage link and use that last bit of shredded or sliced cheese.
  • By using some fresh herbs and a sprinkle of salt and pepper, together with a small side salad or some sliced fruit, you can also make a quick tasty meal and reduce food waste in your own kitchen.

The Frittata was my dad’s specialty. My dad grew up on a farm in post-world war Southern Italy. Everything he ate or drank was also homemade or homegrown. Additionally, not wasting food was a matter of common sense and survival.

As a kid, I loved watching my dad in the kitchen when he was making a Frittata. He would make one version with all sorts of Italian cheeses and soppressata (an Italian dry salami). It was spicy, cheesy and just super flavorful. The other version was actually my personal favorite. In particular because it was so light and fragrant and especially tasty. Made simply with just eggs, potato, Parmesan cheese and fresh basil.

My Favorite Frittata

Serves 4

  • 8- large Eggs, lightly beaten
  • 10 baby potatoes, cooked and quartered. (skin on or off, your choice)
  • ½ cup Parmesan Cheese (I confess, I am a Parmesan Cheese addict, so I usually add more 😉)
  • 3-4 fresh basil leaves, chopped (In this dish, fresh really does make a difference)
  • 1 tbsp. olive oil or butter
  • Salt & Pepper

In a heated non-stick skillet, add olive oil or butter. In a mixing bowl, combine eggs, potatoes, cheese and basil. Add combined ingredients to pan, no stirring is needed and cook on medium low for approximately 15 minutes or until eggs are cooked through.

By placing a plate over pan, you can flip Frittata onto a serving dish or you can serve it right out of the skillet. Sprinkle with salt and pepper, if desired and you can also garnish with extra basil and/or extra Parmesan.
