Roasted Garlicky Eggplant Dip
If you are looking to perk up your next appetizer board or maybe you just need a new movie snack, you must give my Roasted Garlicky Eggplant Dip a try.
This dip is a simply made roasted dip with eggplant, garlic, Greek yogurt and lemon juice along with pantry spices and seasonings and it is absolutely delicious. By roasting the eggplant, and adding fresh garlic, a smoky spiciness develops and the flavor is really opened up by the creaminess of the yogurt and the freshness from the lemon juice.

As a rule, you’re going to want to buy two small or alternatively one medium size eggplant to make this recipe. It should be noted that a large eggplant will have more seeds and that may make it taste slightly bitter. In addition, cooking time is reduced.
Did you know, there is no need to wrap or pierce the eggplant when roasting in the oven? You can simply place on a foil-lined pan and roast for approximately 45 minutes at 350°. That’s it!
Also note, in order for safer handling, I allow the cooked eggplant to cool before cutting. Once it has cooled, I cut the eggplant in half and scoop out the flesh and discard the skin.
Roasted Garlicky Eggplant Dip
- 1 medium Eggplant, that has been cooked, cooled and scooped out.
- 1 – Garlic clove, raw
- 1 or 2 fresh Mint leaves
- 4 -oz. Greek low-fat plain yogurt
- Juice of half a Lemon
- Salt & Pepper
- 1 tbsp. Olive Oil
- 1/8 tsp of red chili flakes
In a food processor, chop the fresh garlic, mint leaves and scooped out eggplant flesh. Just empty into small bowl and stir in yogurt and lemon juice until combined. Next, simply add salt and pepper to taste. Then, using a separate bowl combine olive oil with red chili flakes. Finally, just drizzle chili oil over eggplant mixture.
Last but not least, remember to keep refrigerated until you are ready to serve.
