Seriously, who doesn’t love a simple tomato sauce?
I am going to share with you just how very easy and healthy it is to make your own simple tomato sauce. Therefore, not only can you control what goes in your sauce, but you can easily double this recipe and freeze it for next time.
If you have ripe meaty tomatoes with very little seeds, like a Roma tomato for example, you can use them. First, you will have to score the bottoms and then drop the tomatoes in boiling water for approximately a minute. Using a slotted spoon, remove tomatoes from boiling water and place in a large bowl of ice water. Next, using a pairing knife or your hands, remove the skin. The tomatoes are now ready to be chopped by a food processor or by hand.

In order to have a great sauce, you must start with tomatoes that are in season and very ripe. When I am craving a fresh simple tomato sauce and subsequently don’t have fresh ripe tomatoes available, I have used Pomi chopped tomatoes from @Pomiusa. This product list tomatoes as its only ingredient and it taste super fresh.

All you need is:
- 3 tbsp. EVOO (extra virgin olive oil)
- 2-3 garlic cloves, minced
- 3 fresh basil leaves, sliced
- 4 cups tomatoes, peeled & chopped
- salt & pepper
First, I start by heating up the oil in my @LeCreuset pot at medium-high. Second, I add the garlic and the basil. Note that you should stir frequently for about 30 seconds and lower heat slightly because you don’t want the garlic to burn! Next, add the tomatoes. Bring the heat back up and let sauce come to a gentle boil. Finally, reduce heat and then season with salt and pepper to taste. Simmer for 20 – 30 minutes.
Generally, my kids like this tomato sauce served over penne or spaghetti, but with so many options, you just do you 😉
