You will need:
You will need 4 Sweet Potatoes (washed and unpeeled)
2 tsp. + 1 tbsp Olive oil
1 sprig fresh Rosemary, chopped finely
2 cloves Garlic, minced
Salt and Pepper
Savory Sweet Directions:
At first, start by preheating the oven to 425° and lining oven pan with aluminum foil. Next, simply brush on 2 tsp. olive oil, making sure potatoes are lightly coated and then place potatoes onto the oven pan and bake for 45 minutes.
I then, remove pan from inside the oven. Next, with a mallet or heavy spatula, I smash down on the potato. Just enough to break open the skin. Meanwhile, mixing remaining oil with rosemary and garlic, I spoon the mixture over the potatoes and season well with salt and pepper.
Finally, return pan to the oven and let the sweet potatoes continue to cook for approximately 20 more minutes or until golden and slightly crispy. Enjoy!
