Riced Cauliflower Stuffed Chicken

Once you taste it, you wont miss the bread in this Riced Cauliflower Stuffed Chicken with Gravy. All the flavor of the stock and seasonings, will be absorbed by the riced cauliflower, just like traditional bread cubes.

During my last visit to Trader Joe’s, I picked up their Riced Cauliflower Stuffing, from the freezer case. Included in the bag with the rice cauliflower are carrots, leeks, onions, celery and, also dried sweetened cranberries. All of these ingredients are combined with a seasoned vegetable broth.

Notably, for this recipe, I chose to not follow the stovetop cooking directions as stated on the bag. Instead, I added a bit of chicken stock and cooked the mixture in my microwave for four minutes. Then, I simply waited for it to cool completely, before placing onto the raw chicken.

Homemade Riced Cauliflower Stuffing

If you are unable to find this seasonal item, by all means, you can make this amazing stuffing yourself.

In this case, you can easily combine fresh or frozen riced cauliflower and diced carrots along with some chopped fresh onions, leeks and celery. Next, combine the veggies with a bit of stock, tomato paste, a few sweetened dried cranberries, garlic powder, thyme and rosemary along with salt and pepper to taste.

Then, all you need to do is steam the mixture in your microwave, just until the veggies have started to soften.

Stuffed Chicken Breast

I start with boneless chicken breast, that have been flattened, patted dry with a clean towel and seasoned, on both sides with salt and pepper. Followed by a generous scoop of the stuffing, in the center of the chicken breast. You will need to make sure that the stuffing is completely cooled, first.

Now, you are ready to roll. Just tuck the ends under, seam-side down on your casserole pan. Importantly, don’t leave out that extra stuffing, you can just place it around the rolled chicken breast.

At last, all you have to do is cover the riced cauliflower stuffed chicken with your homemade or purchased gravy before placing in the oven.

You will need:

  • 4-6 boneless, flattened Chicken Breast
  • Salt & Pepper
  • 1lb. steamed Trader Joe’s or homemade (see above) Riced Cauliflower Stuffing,
  • 1 cup Prepared or homemade (see below) Chicken Gravy

Homemade Gravy for Riced Cauliflower Stuffed Chicken

Start by melting 2-tbsp. butter in a saucepan over medium-high heat. Then, add 2 tbsp. flour and whisk together for 1-2 minutes. Now gradually add, 2 cups of chicken stock and bring to a boil. Finally, season with salt and pepper.

Riced Cauliflower Stuffed Chicken

  1. In the first place, make sure your chicken breast have been patted dry before you season them, on both sides with salt and pepper.
  2. Next, place a generous scoop of the completely cooled, riced cauliflower stuffing, equally onto each chicken breast.
  3. Carefully, roll the chicken breast, with the filling and place them seam-side down.
  4. Pour the gravy over the chicken rolls, then place in a preheated 375° for 30 minutes or until chicken is cooked through.
  5. Top with a sprinkle of fresh cracked, black pepper, before serving.

  • This dish can be prepared ahead of time. However, you will need to pour the warm gravy on it, just before placing in the oven to cook.
  • Serve this with a side of creamy mashed potatoes. Yum!
